Take your log out of the box immediately! The log needs to breath! When the log leaves here it will weigh between 3 to 5lbs.
You will need: a scale and a clean bucket (preferably not one that has had detergents in it before)
Cedarwood Logs are ready to start as soon as you get them. Some other people sell logs that need to go through the Spawn Run process at your house. My logs have already gone through all stages and are ready to go! That's why I say that you can have mushrooms within 2 weeks.
Place the log in any room on a cookie cooling rack or a plate. I don’t like the log to lie in a puddle of water. If this happens slime could form and you would have to wash it off daily. A rack is best.
Temperature: Ideal room temperature is 62 to 65 degrees, but it seems to still do fine in your coolest room. Warmer temperatures will affect the mushrooms quality, may make them too dry, or may also affect the log itself.
Moisture: Mist the entire log with a spray bottle of plain water as much as possible. You can also run it under the spigot in the sink.
Humidity: Place the log inside the bag and try not to have it touching the sides. It is imperative that air can circulate around the log.
NEVER cover your log with a Tupperware or any terrarium style set up at any time! These logs are living things but unlike plants do not thrive in an environment where they don’t get sufficient fresh air flow. When the mushrooms begin to form they give off CO2 and if the CO2 gets too high in the tent or any covering it will cause the mushrooms to stop growing. The tent is used for humidity control as well as CO2 control. The holes in it are specially designed to give the mushrooms the required amount of both.
Light: The mushrooms caps need adequate light in order to become a nice dark brown color. Any household lighting is fine, or natural indirect sunlight. Grow lights do not work.
If you live in an area of the country where the outside temperature matches what we suggest for your log, then put it outside in the shade! Especially during the pinning stage. Once the pins are set and the mushrooms begin to form you could bring it inside to display and harvest!
Step 1 ~ Initial Soak
In order to stimulate the log into production mode, it must be soaked in cool water. Stimulating a wet spring in the forest. Submerge the log in a clean bucket of water or a clean sink. Place something heavy on top of the log to hold it completely down under the water. For the first soak, the log may take a few hours to gain the weight it needs. Check it every hour until it has picked up 2 to 3 lbs of water weight.
Step 2 ~ Pinning
Place the log into the humidity tent during this period. About a week after the soak you will begin to see a small whitish star-like growth on the outside of the log. This is called a “pin”. Within 10 days these pins will continue to form into mushrooms. If your log is becoming too dry, you will notice the pins only forming in certain spots. If this happens it is ok to put it back in the soak water for a half hour to hour.
As the mushrooms get larger you will need to remove the bag. About the size pictured last.
Step 3 ~ Harvesting
Wait until the cap has almost opened completely flat. As pictured below. Pluck them off at the base of the stem. You will notice a white film covering them, these are spores. They will diminish after picking and handling.
Step 4 Soaking for 2nd Break
After the log has completed its 1st break, you will need to let it rest. This period can be anywhere from 3 days to 3 months if you wish. Dormancy should take place in the refrigerator.
To initiate another break follow the same steps as before with soaking still checking the log every half our or so for weight. Depending on how much weight the log lost during the 1st break, soak times may vary. This time you only should pick up about 3 lbs extra in water weight.
Just remember that at any soak, over-soaking can be detrimental. Too much water inside the log can kill the spawn and your log will become moldy from the inside out.
Continue to follow the steps and pick as long as the log will hold up for you. You should be able to get at least 3 breaks. With every break the log will get smaller and smaller as all of the nutrients have been used to make mushrooms for you.
When it’s spent you can put it in your compost pile.
Things to look for:
Slimy stuff under the log: This is caused by water lying between the plate and the log. It is ok, it will not hurt anything. You can wipe or scrape it off if you like.
Green spots on the surface of the log: This is a green mold, which usually forms on the log in a commercial growing environment. If you see this scrape it off and spray a very light mixture of bleach/water all over the log. Green mold will thrive with too much humidity, so you may want to cut back on the watering a little.
If your log becomes over-moldy like the first picture, please remove moldy spots and let it completely dry out!!! It may take a week or more, but the longer you let it sit and dry the less chance you will have of the mold returning.
If you are going away, or the Shiitake Log is a gift, you can make it dormant by placing the log in the refrigerator. It is best to do this before pins start to form or after you have just picked off a break. After refrigeration, soak the log in water (step 4) and wait for the next break to arrive.
